উপকরন

মচমচে পুরি তৈরি

* আটা বা ময়দা ১/২ কাপ
* মিহি সুজি ১/২ কাপ
* লবন ১/৪
* বেকিন সোডা / বা খাবার সোডা সামান্য পরিমানে বা ১/৪ চা চামচের কম
* পানি ১/২ কাপ বা কম


* পানি বাদে সব উপকরন মিশিয়ে নিন ।
* অল্প অল্প করে পানি মিশিয়ে কিছুটা নরম খামির বানিয়ে নিন ।  খামির কাপড় দিয়ে ঢেকে রাখুন ৩০ মিনিট ।
* খামির তিন ভাগ করে নিন ।
* একভাগ নিয়ে পিড়িতে ময়দা ছিটিয়ে আস্তে আস্তে কিছুটা পাতলা রুটি বানিয়ে নিন ।
* বোতলের ঢাকনা বা গোল কোন কাটার দিয়ে ছোট ছোট পুরি বানিয়ে নিন ।
* পুরি গুলো ভেজা কাপড় দিয়ে ঢেকে রাখুন ।
* কড়াইতে তেল দিয়ে তেল গরম করে নিন ।
* ফুটন্ত তেলে পুরি দিয়ে চামচ দিয়ে চেপে ধরুন ।
* পুরি ফুলে উঠলে মাঝারি আচে বাদামি করে ভাজুন ।
* তেল ফুটন্ত হতে হবে নয়ত পুরি ফুলবে না
* ঠাণ্ডা করে এয়ার টাইট জারে রাখুন ।
* ১৫ দিন ও ভাল থাকবে ।

আলু - ২ কাপ ( সিদ্ধ ও ভর্তা করা )
* কাঁচামরিচ কুচি ১ টেবিল চামচ
* ধনেপাতা কুচি&২ টেবিল চামচ
জিরা পানি তৈরি

* তেতুলের কাথ২ টেবিল চামচ
*পানি ১ কাপ
* ভাজা জিরার গুঁড়া১ টেবিল চামচ
* শুকনা মরিচ গুঁড়া১ টেবিল চামচ ( ইচ্ছে মত)
* চিনি২ টেবিল চামচ
* বিট লবন&পরিমানমতো
উপরের সব উপকরন একসাথে মিশিয়ে নিন
এখন এক একটি ফুচকা নিয়ে একপাশে কিছুটা ভেঙ্গে নিন এরপর ভেতরে পুর দিয়ে জিরা পানি দিয়ে পরিবেশন করুন । চাইলে ঝুরিভাজা ছিটিয়ে নিন ।

টিপস

ফুচকা গুলো ফুটে উঠার জন্য অবশ্যই তেল ফুটন্ত হতে হবে আর পুরি গুলো কাটার সাথে সাথে তেলে ছাড়তে হবে নতুবা ভেজা কাপড় দিয়ে ঠেকে রাখুন । নয়ত পুরি ফুলবেনা ।
